The jackfruit (kathail) also called as poor man's fruit grows in East and South of India. Our country is the second largest producer of this vegetable which can be identified by its spiky skin, yellow color and large size. The hard skin needs to be peeled to get enclosed yellow flesh and seeds encased in fleshy pods. This seasonal vegetable can be availed between the month of September and December, June and August. The nutritional profile of this vegetable contains carb, fiber, protein, vitamin A, vitamin B6, vitamin C, thiamine, riboflavin, calcium, copper, iron, zinc, magnesium, manganese, phosphorous and potassium.
